This simple recipe is not only healthful, but it can also be customized by adding your favorite spices or toppings. It’s ideal for hectic days when you need something filling and nutritious in a hurry!

Ingredients:

  • 2 eggs
  • 1 cup fresh spinach, chopped
  • 1 tablespoon of olive oil
  • Salt & pepper to taste
  • Whole wheat wraps or tortillas
  • Optional toppings:  sliced tomatoes and avocado

Instructions:

  • Heat the olive oil in a nonstick pan over medium heat.
  • Sauté the chopped spinach for 2-3 minutes, until wilted and brilliant green.
  • In a mixing dish, whisk the eggs with a touch of salt and pepper.
  • Add the whisked eggs to the pan with the spinach. Allow them to cook for about 1-2 minutes, or until the edges start to firm.
  • Gently whisk in the eggs and spinach, simmering for another 2-3 minutes until the eggs are fully cooked and no longer runny.
  • Place the whole wheat wrap or tortilla flat on a dish. Spoon the egg and spinach mixture into the center of the wrap.
  • If desired, add sliced tomatoes or avocado to the top.
  • To secure the filling, fold the wrap’s sides in and roll it up from the bottom.
  • Slice in half, if desired, and enjoy!

This Egg and Spinach Wrap is a versatile recipe that may be served in several ways. Feel free to experiment by adding other ingredients like bell peppers, onions, or cheese to your liking.
