Here’s a simple but flavourful recipe to make your burrito.

Ingredients

  • 2 large eggs
  • 1/4 cup diced bell peppers (any color you prefer)
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped spinach or kale
  • 2 whole-grain tortillas
  • Salt and pepper to taste
  • Optional: shredded cheese, salsa, avocado slices, hot sauce

How to Make;

  • Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or olive oil.
  • Add diced bell peppers and onions to the skillet and sauté for 2-3 minutes until they begin to soften.
  • Stir in diced tomatoes and chopped spinach or kale. Cook for another 1-2 minutes until the vegetables are tender.
  • Crack the eggs into the skillet and scramble them with the vegetables until cooked through.
  • Season the egg and vegetable mixture with salt and pepper to taste.
  • Warm the tortillas in the microwave for about 10-15 seconds or heat them on a dry skillet for a few seconds on each side to make them pliable.
  • Divide the egg and vegetable mixture evenly between the two tortillas, placing it in the center.
  • If desired, sprinkle some shredded cheese over the egg mixture while it’s still warm.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • Serve the burritos immediately with salsa, avocado slices, hot sauce, or any other toppings of your choice.

Feel free to customize your egg and vegetable burrito with additional ingredients such as cooked black beans, diced avocado, or a dollop of Greek yogurt for added creaminess. Enjoy your delicious and nutritious breakfast burrito!
