Ingredients;
- 1 cup of dried lentils
- 2 carrots
- 2 celery stalks
- 3 cloves of garlic
- Diced tomatoes
- 6 cups of vegetable broth
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of smoked paprika
- 1 bay leaf
- Salt and black pepper to taste
- 2 cups of chopped kale or spinach
- 2 tablespoons of olive oil
- Fresh parsley(optional)

How to Make;
- Rinse your lentils and set aside
- In a pot, heat your olive oil over medium heat, then add your chopped onion, carrots, and celery. Sauté for about 5 minutes.
- Add your garlic, ground coriander, smoked paprika, salt and black pepper. Cook for a minute.
- Add your lentils, diced tomatoes, vegetable broth, and bay leaf, and allow to simmer for 25 minutes.
- Add your kale or spinach and cook for another 5 minutes.
- Remove the bay leaf and serve.
