Vegetable and Lentil Soup

Vegetable and lentil soup is not only delicious, but it is filled with fiber, protein, and various nutrients from the vegetables. Here’s a recipe on how to make this delicious meal.

Ingredients;

  • 1 cup of dried lentils
  • 2 carrots
  • 2 celery stalks
  • 3 cloves of garlic
  • Diced tomatoes
  • 6 cups of vegetable broth
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of smoked paprika
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 cups of chopped kale or spinach
  • 2 tablespoons of olive oil
  • Fresh parsley(optional)

How to Make;

  • Rinse your lentils and set aside
  • In a pot, heat your olive oil over medium heat, then add your chopped onion, carrots, and celery. Sauté for about 5 minutes.
  • Add your garlic, ground coriander, smoked paprika, salt and black pepper. Cook for a minute.
  • Add your lentils, diced tomatoes, vegetable broth, and bay leaf, and allow to simmer for 25 minutes.
  • Add your kale or spinach and cook for another 5 minutes.
  • Remove the bay leaf and serve.
  • You can garnish with your fresh parsley.

Before serving, you can taste the soup and adjust the seasoning if desired. Soup can be served with a slice of crust bread on the side. Feel free to customize the recipe with spices according to your preference.
